The Janus chef's knife has an 18 cm (7 inch) long blade made of a special steel coated with a Diamond-Like-Carbon-Coating (DLC). On the one hand, the steel alloy of the blade contains a high proportion of the rare element niobium. Niobium achieves the finest possible steel structure despite inertia in rust and results in extremely high strength and cutting durability. In addition, the blade is coated with a few micrometers thick but extremely hard DLC coating. This matt black carbon layer is insensitive to acids, high temperatures and extremely scratch-resistant. Great side effect: The blade slides more easily through the material to be cut, as the coating has very low coefficients of friction. The combination of DLC coating, approx. 60 HRC hardness of the blade, one-sided hollow grinding and the slightly curved shape of the blade make this lightweight chef's knife an incomparable cutting tool in its class.
